Ingredients
1 1/2 c all-purpose flour
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1 1/2 tsp pumpkin pie spice
1 tsp cinnamon
1 c pumpkin puree
2 large eggs
1/2 c melted butter
1/2 c Healthier Comforts Monk Fruit Sweetener
1/2 c whole milk
1 tsp vanilla extract
For the Glaze
1/2 c Healthier Comforts Monk Fruit Sweetener
1/2 tsp vanilla extract
3 Tbsp butter
2-4 Tbsp water
Directions
Preheat the oven to 350°F. Line a muffin tin with paper liners.
In a large bowl, mix the all-purpose flour, baking powder, baking soda, salt, pumpkin pie spice, and cinnamon.
In a separate bowl, whisk together the pumpkin puree, eggs, melted butter, monk fruit sweetener, whole milk, and vanilla extract until smooth.
Gradually add the dry ingredients to the wet ingredients, stirring just until combined. Be careful not to over mix.
Divide the batter evenly among the muffin cups, filling each about 2/3 full.
Bake for 18 to 22 minutes, or until a toothpick inserted into the center comes out clean.
Let the muffins cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
To make glaze, whisk ingredients until smooth. Brush onto muffins.
