Ingredients
1 Ib pasta (elbow macaroni or shells)
4 Tbsp butter
3 Tbsp all-purpose flour
2 c whole milk
1 c half and half
1/2 c Healthier Comforts Organic Cheddar Cheese Powder
1 c grated Gruyère cheese
1 c grated Vermont white cheddar cheese
Salt and pepper to taste
1/2 c breadcrumbs (optional, for topping)
1/2 c grated Vermont white cheddar (optional for topping)
Directions
Preheat the oven to 375°F (190°C).
Boil the pasta in salted water until al dente. Drain and set aside.
In a large saucepan, melt the butter over medium heat. Whisk in the flour and cook for 1–2 minutes, stirring constantly, until the mixture is golden and bubbly.
Slowly pour in the milk, whisking constantly to avoid lumps. Continue to cook, stirring frequently, until the sauce thickens (about 5 minutes).
Lower the heat and whisk in the Healthier Comforts Organic Cheddar Cheese Powder until fully dissolved. Gradually stir in the Gruyère and Vermont white cheddar cheeses until melted and smooth. Season with salt and pepper to taste.
