Does it actually whip into stiff peaks for baking?
Yes! Because it is real egg white protein, its natural "superpower" is trapping air. Once rehydrated, it whips, foams, and bakes exactly like a conventional egg white. It provides the perfect structural integrity for notoriously difficult vegan bakes like meringues, macarons, soufflés, and angel food cake.
How much powder do I use to replace one traditional egg white?
A little goes a long way! To replace one large liquid egg white in a recipe, simply mix 5g of powder (1 tablespoon) with 30g of water (2 tablespoons). One 8oz bag of our powder is equivalent to roughly 45 liquid egg whites.
Update: We’ve recently optimized our ideal water-to-powder ratio for the absolute best fluff and texture! While your current pouch may show our original mixing instructions, we highly recommend using the updated ratio above for peak performance.
What is the best way to mix it? (Why is it clumping?)
Mixing Tip: Because our powder is a highly concentrated protein isolate, it can sometimes be a little stubborn to mix. To avoid clumping, we recommend using a quick pulse in a blender. Allowing the powder to sit and hydrate in the water for a few minutes beforehand will also help yield a perfectly smooth texture.
Is it non-GMO?
Our animal-free egg white protein is manufactured by precision fermentation using a genetically modified microorganism under containment. The ingredient has been purified and does not contain any genetically modified microorganism (GMO) or its genetic material. Read More

Our animal-free protein is bio-equivalent to the protein found in traditional egg whites. Therefore, individuals with egg allergies or sensitivities must not consume this product.
